Here's one I make from time to time...especially when you don't feel like something hot..

2 cans solid white tuna packed in water drained

1 can Canellini Beans (white beans) rinsed and drained

2 tbs finely chopped Italian parsley

1/4 to 1/2 cup finely chopped red onion

1-2 tbs olive oil

fresh lemon to taste ( I just put wedges on the side)

salt & pepper to taste

You can serve it in the center of a garden salad with hard boiled eggs for a light dinner or flake the tuna finely and serve as a appetizer with crackers.
