Chinese Chicken Salad....my favorite salad for dinner.  Everyone I make this for LOVES it. 

 

2 chicken breasts, shredded 

1 head  lettuce

2-3 stalks of green onions

¼ c. of toasted almonds

1 tbsp. Toasted sesame seeds

1 can fried Chinese noodles (ex. Chun King)

 

Dressing:

1/8 c. sesame oil

1/8 c. salad oil

2 Tbsp. Sugar

3 Tbsp. Rice vinegar

½ tsp. Salt

1/8 tsp. Black pepper

 

I have found that if I cook the chicken in either a Terryaki or Yoshida sauce first it add a lot to the salad.

 

Chop whatever kind of lettuce you like and slice green oninon.  Toast almonds (or just throw them in there) and toast sesame seeds. (Sesame seeds "pop" when being toasted so have a lid handy.   Add to the salad.  You can add the chicken warm or cold...your call. 

 

Mix the dressing and add right before serving the salad and add the noodles to the top. 

 

SOOOO yummy!

I've made something similar to this, but I used fresh spinach instead of lettuce and Ramen noodles (uncooked, and broken up a bit) let sit for 30 minutes before serving.

I do like Jerseygirl and use uncooked ramen noodles. Try using romaine lettuce and either napa cabbage or regular green cabbage together for the greens. It's one of those things - just play with what you like! Great for leftover chicken - even works for BBQ'd chicken.
